Bearn Pays basque …the French cuisine touched by the warmth and colour of Spain.

Start with Ttoro, a slice of Bayonnes finest cured ham or a delicious serving of garbure for the entree.

followed by the main course of…

A salmis de palombe, an axoa, poule au pot, truite des gaves or marmitako…the spices impregnating the senses, the aromas filling the air, the flavours absolutely delectable…this is simply heaven!

Desert, let yourself be tempted by the brebis cheese and its fresh black cherry jam, the specialty of Itxassou. Impossible to pass up the deliciously traditional basque cake topped in cream.
